Yummy Coconut Macadamia Nut Cookies

1 cup softened butter
1 cup brown sugar
1/2 cup sugar
1 egg

2 1/4 cups flour
1 t baking soda
3/4 cup coconut flakes
3 1/2 oz. macadamia nuts


Instructions:

  1. Mix butter, sugars and egg.
  2. Stir in flour and baking soda.
  3. Chop macadamia nuts into coarse chunks.
  4. Stir in coconut flakes and nuts.
  5. Drop dough by heaping teaspoonfuls about 2 inches apart onto ungreased cookie sheet.
  6. Bake at 375 degree for 8-10 minutes or until light brown.
  7. Cool slightly, remove from cookie sheet.
  8. Enjoy!

Yield: 4 1/2 dozen.
